AOP Côtes du Roussillon Villages 2021-The Vineyards on the Mountain Range
GRAPE VARIETY:Mourvèdre, Syrah, GrenacheREGION:The grape clusters are hand-harvested from the best fields around the village of Maury in the Agly valley, containing the essence of the black slate land.PROCESSING:Grapes are hand-harvested and fermented using traditional methods. 30% of the material is fermented in clusters and aged for 18 months in wooden barrels.FLAVOR:Get lost in a world of intertwined notes of spicy flavors, blended with herbal aromas and various red and black fruits. Feel the transition of the notes on the palate with hints of licorice and a light touch of flowers. At the end of the journey, you will encounter a refreshing and slightly astringent finish. Le Crépuscule is the perfect choice to enjoy with grilled meats, roasted duck breast, and dry cheese.

AOP Côtes du Roussillon Villages 2021- The Windy Gardens
GRAPE VARIETY:Carignan, Syrah, GrenacheREGION:The vineyard is located between the Pyrenees mountain range and the Mediterranean Sea, on sandy granite soil in the Agly valley. The grapes grown here inherit the essence from this special land, then are hand-harvested at the ripest moment, selecting only the clusters of grapes that meet perfect quality. As a result, the wine has a smooth texture with a natural sweet aftertaste.PROCESSING:The wine is produced using traditional methods: fermented at 30 degrees Celsius to achieve excellent color and flavor, then soaked for 4 - 5 weeks with the grape skins submerged in juice multiple times a day. 100% of the wine is aged for 18 months in wooden barrels.FLAVOR:La Nuit contains an astonishing complexity: a harmonious blend of ripe black fruits, highlighted by gentle notes of sweetness and licorice. The finish has a hint of delicate vanilla, long and rich, making it an ideal choice to enjoy with braised and grilled red meats.

AOP Côtes du Roussillon Villages 2021- The Garden Near the Sea
GRAPE VARIETY: Mourvèdre, Syrah, GrenacheREGION: A precious wine from the vineyard on slate land more than 300 meters above sea level, overlooking the Roussillon plain and amidst the scrubland.PROCESSING: The grapes are hand-harvested in separate 10kg boxes, and the grapes from each plot are fermented in different fermentation tanks. The grape skins are submerged in juice by hand to ensure the highest extraction efficiency, and the wine is aged in wooden barrels for over 18 months.FLAVOR: With a particularly deep red color, L'Aurore is a complex and joyful blend of vanilla, with flavors of ripe red and black fruits combined with the scent of scrub and licorice, with a hint of coffee flavor. Rich and concentrated, L'Aurore offers an alluring aftertaste and an incredibly luxurious lingering finish, suitable for special and formal evening parties.
