The Don Román brand pays homage to "Abuelo Román" of the Montaña family, who was a driving force behind the family business – sharing the same lineage as the Marqués de Tomares label.

Cava Don Román Brut is produced in Sant Sadurní d'Anoia (Catalonia), from the La Llebre plot planted in 1995 on clay-rich soils at an altitude of around 225 metres.

Made using the traditional method (second fermentation in bottle); fine bubbles with fresh green-fruit and floral notes, plus subtle toasty character from extended lees ageing.
